Chapter 1: Chocolate and Caramel Ice Cream
Original Chocolate
Ingredients:
1 pinch salt
1 tsp. vanilla
1 c. whipping cream
1 c. sugar
2 eggs
1 c. milk
4 oz. chocolate, unsweetened
Directions:
Melt the chocolate using a double boiler method without letting it boil. Slowly whisk in the milk so it becomes smooth and then take the boiler off the heat.
In another bowl, whisk together the eggs for a few minutes to make them fluffy before slowly blending in the sugar. Finally, add in the salt, vanilla, and cream.
Pour together the cream and chocolate mixture and blend well. Place into the fridge and allow it to become cold, which will take a few hours.
Next, move it to your ice cream maker and follow the instructions on the machine for proper freezing. When done, serve right away or store properly for later.
Peanut Butter Chocolate
Ingredients:
1 tsp. vanilla
1 c. whipping cream
¾ c. sugar
2 eggs
1 ½ c. milk
¼ c. cocoa powder, unsweetened
1 oz. chocolate, unsweetened
½ c. peanut butter, smooth
Directions:
Using the double broiler method, melt the chocolate on the stove, taking care to not let it boil. Slowly add in the cocoa and stir until smooth. Whisk the milk inside and heat up before removing from the heat.
Whisk in the eggs for a few minutes to make fluffy and light before adding in the sugar to blend. Pour in the vanilla and cream
