Spare the Curry Indian Style

● 5 cloves garlic, minced

● 1 tablespoon curry powder (I use Maharajah style curry powder )

● 1 tablespoon kosher salt

● Juice of 1 lemon

● 1 ¼ cup chopped cilantro, divided

● 4 scallions , thinly sliced

● 2.5 pounds of lamb grazed Spareribs

● 2 teaspoons kosher salt

● 1 tablespoon curry powder (I use Maharajah style curry powder )

● Coconut oil 1 tablespoon

● 1 large yellow onion, coarsely chopped

● ½ pound ripe tomatoes

2) Cover and refrigerate for at least four hours to one day.

4) While the ribs are sizzling, grab the onions and tomatoes were thrown into a blender and blitz until smooth.

5) Once burned ribs add chopped garlic to the pot off the heat empty. I take the pot off the heat so the garlic does not burn - they are adding a disgusting metallic taste and will ruin your curry.

6) Stir the garlic until fragrant (30 seconds) before adding the tomato puree and onion.

7) Place the pot back on burner over medium heat setting.

8) Add the curry powder, salt, 1 cup chopped cilantro, and lemon juice. Bring to a boil and add the lamb again. Mix to cover ribs with curry sauce.

9) Lock the lid of the pressure cooker and increase heat to high to bring to high pressure. Once high blood pressure is achieved, reduce heat to low to maintain high pressure for 20 minutes.

10) Let pressure release naturally (10-15 minutes). Taste for seasoning and add the scallions and ¼ cup chopped cilantro.

Beef Under Stress

● 2 pounds beef stew meat

● Several tablespoons oil

● 3 cups beef broth

● 1 cup water

● 1 tablespoon tomato paste

● 2 bay leaves

● 6 sprigs thyme

● 1 onion , sliced

● 4 carrots , peeled and sliced

● 4 garlic cloves

1) Season the meat with a little salt and pepper. With lid , heat the oil in the pressure cooker over medium high heat . Brown the meat for 3-5 minutes . ( The meat will brown better if her medium brown , then remove from the pan and brown the other half. )

2) When all the meat is browned , add the onion , carrot and garlic (and other vegetables) . Cook a few minutes then add the broth , tomato paste , bay leaves and thyme sprigs .

3) Put the lid on the pressure cooker , making sure it clicks into place , and lower the heat to high . As soon as the pressure cooker starts to release steam screams, set the timer and cook stew for 25 minutes. When the steam valve is reduced , remove the lid. Add salt and pepper to taste.
