Introduction
Over 10,000 years ago, before the advent of farming, man survived only on what nature provided. He hunted for fresh meat, caught fish from lakes and streams, and foraged for wild fruits and vegetation. It was a diet of survival, high in the proteins and nutrients he would need to exist as well as provide the energy to flee from danger.
Today, many people are returning to the diet of the Paleolithic era. They adhere to the diet’s strict guidelines: grass-fed meats, fresh-caught fish and seafood, cage-free eggs, seasonal fruits and vegetables, nuts and seeds, raw honey and healthy
oils, such as olive, coconut, almond, and flaxseed. They consider the health benefits of this biologically suited
diet to be too numerous to ignore. Practitioners believe a Paleo diet can lower cholesterol and blood pressure, reducing the onset of cardiovascular disease, help with weight loss, decrease inflammation in the body, and promote healthier skin.
While the Paleo diet contains vitamins, minerals, and fiber, it leaves the practitioner without some of life’s most pleasurable foods: breads, muffins, pancakes, and waffles. But, by simply substituting ingredients, it’s easy to stay within the guidelines of the diet and make delicious grain-free bread products. This book is a compilation of 50 tasty and easy to make Paleo bread recipes, which follow all the guidelines of the Paleo diet.
