    Introduction

    FOOD is in our everyday routine. Some people pay great attention to what they eat; some have a fast-pace lifestyle in which eating becomes only an obligation. Whichever the way your approach to food is, there is almost no denial that anyone can recall a good meal that made oneself happy, lightened up the spirit, and offered satisfaction. This is because food plays an active role in our body, energy level, and general wellbeing.

    The idea of eating healthy is extremely important, but often it is perceived as hard to implement: you may think healthy recipes are hard to prepare; healthy meals may not be tasty or exciting; or maybe it is just hard to find healthy foods convenient to everyday consumption. However, this book is intended to share with you ideas that deconstruct such assumptions. Healthy foods can be easy, delicious and fun, and most importantly, they can turn our lives and health around through natural nutrition, which can also make us look good and feel good.

    Whichever level of your experience in making food is, all you need to get started is to be mindful with your food choice, and if possible, your selection on what to get into your plate. If not for every meal, try to do so as much as you can. To make it more accessible to incorporate mindful eating with the idea of why and how, in my writings, I organized the themes featured by four seasons with this book focused on Springtime only. It is not crucial to strictly follow them by using the recipe calendar with the designated season. If the book helps you to bring more awareness to your diet depending upon the time in the year and at the same time enable you to add your personal touch based on your needs and enjoyment, the goal is accomplished.

    THE rhythm of life is becoming faster and faster in our modern time. Is your lunch eaten in front of a computer screen and the dinner frequently consumed with your eyes fixed to the TV in front? It is publicized that such mindless chewing is taking its toll on our weight and health, mindfulness approaches have being coined to promote the notion of paying attention to our food, our body cues, and the very act of eating [1]. Much of the discussions on mindful eating today have been emphasizing the awareness for surrounding experience of food preparation and consumption, sometime with practical implications even on weigh loss benefits.  

    In this book series, however, I would encourage a mindfulness approach that encompasses both internal processes and external environments, such as nature diversity like seasons. You may notice that sometime temperature and other weather conditions have an impact on your appetite. In summer we seek for food that is light, refreshing, hydrating, and cooling to the body. In Winter instead, our body asks for a different kind of fuel. Since we may find same kinds of food year-around thanks to modern food processing and worldwide food distribution, we tend to forget that all of the world's healthiest foods are
