    BRIEF HISTORY OF MEXICAN FOOD AND MEXICAN COOKING

    Mexican food has a long and distinct history, believed to have its origins with the Mayan Indians. The Mayan Indians were hunters and gatherers who ate a diet consisting of wild game, fish and tropical fruit as well as corn tortillas with a bean paste. This is where the story of Mexican food began, but it quickly moved on.

    By the mid 1300's there was a thriving Aztec Empire.  Many of these staple Mayan foods still made up a large part of the diet; however the recipes were diversified with an influx of newly discovered ingredients. It is around this time that it is believed a selection of new and exciting ingredients found their way into these recipes like honey, chili peppers, chocolate and salt. By this time some of the wild game like duck and turkey were kept domestically for food purposes.

    Spain invaded Mexico in 1521 and brought along many new influences into Mexican cooking. New livestock was introduced like pigs, cows and sheep. The Spaniards also introduced Mexico to other ingredients like garlic, dairy products and a plethora of herbs, spices and wheat. This is the time when the traditional Mayan Indian cuisine fused with other global influences like Caribbean, French, South American, Portuguese and West African. There is little wonder that Mexican food is so diverse with regional varieties of the most popular dishes.
