BRIEF HISTORY OF MEXICAN FOOD AND MEXICAN COOKING
Mexican food has a long and distinct history, believed to have its origins with the Mayan Indians. The Mayan Indians were hunters and gatherers who ate a diet consisting of wild game, fish and tropical fruit as well as corn tortillas with a bean paste. This is where the story of Mexican food began, but it quickly moved on.

There is little wonder that Mexican food is so diverse with regional varieties of the most popular dishes.
