    Paleo Crock Pot Breakfasts

    Crunchy Apple Crumble Breakfast Pudding

    If you’re like me and like having a bowl of warm cinnamon oatmeal for breakfast in the morning (but have decided to give up grains for a Paleo diet), you’ll absolutely love this breakfast pudding. It’s 100% cinnamon flavored energy with the mouth-feel of oats but without the sugar crash mid-morning. It’s a warm, easy breakfast for busy folks on the go.

    For the pudding

    .....1 cup non-dairy milk – unsweetened almond milk works well

    2 cups spring water

    2 Tablespoons maple syrup

    1/2 cup chia seeds

    2 Tablespoons arrowroot powder as a thickener *see note

    1 tsp ground aromatic cinnamon

    1 pinch salt

    5 lg apples, sliced – do not peel (I prefer lg green Granny Smith apples)

    *Note: can use tapioca starch, corn starch (not paleo), potato starch (not paleo)

    For the cinnamon crunch topping

    1/2 cup blanched almond flour

    1/4 cup unsweetened shredded coconut

    1/4 cup coconut palm sugar

    1 tsp cinnamon

    1/4 cup unsweetened apple sauce

    1 tsp pure vanilla extract

    1 scoop protein powder (optional)

    Use a 3 quart crock pot.

    Mix milk, water, maple syrup, chia seeds, arrowroot or other thickener, cinnamon and salt.

    Layer sliced apples over this mixture. – Do not combine.

    In lg bowl – mix crumble topping ingredients. Use your hands to spread this over the apples

    Cover. Set timer for 4 hours on low or 2 hours on high.

    Unplug and let sit, covered, for 1 hour

    Top with raisins and/or walnuts and maybe
