The Multi-Purpose Power Powder
Every cook knows that baking soda is a needed ingredient for cakes, cookies, muffins, breads, and other baked goods. And many of us keep a little orange box in the back of the fridge to cut down on food odors. But have you ever thought about using baking soda to relieve itchy skin? Or to freshen your dog’s breath? How about adding a pinch to fluff up your mashed potatoes? Or to soften your clothes? Got dirty pots and pans? Got bored kids? Got a fire?! Let baking soda come to the rescue!
Yes, baking soda can do all of that and much more. That lonely little box of white powder sitting in your kitchen cupboard is actually a powerful chemical agent that can be used to clean, deodorize, sanitize, and solve various problems all around your house and yard. Non-toxic and environmentally friendly, it’s safe to use inside and outside, around the pets and kids, even on the pets and kids. A small box is cheaper than a candy bar and can do your body a whole lot more good. As versatile and effective as baking soda is, it’s a wonder the stuff isn’t sold by the crate!
A Short History
The discovery and development of baking soda can be traced back to American colonial times. In the mid-eighteenth century, colonists used a crude potassium carbonate substance extracted from wood ash called potash as an ingredient for making soap and glass. Potash production soon became a major industry, with large amounts of potash being exported to England for use in factories. In the 1760s bakers, by chance, discovered that adding pearlash (concentrated potash) to sourdough not only sweetened the dough because of its alkalinity, but made it rise by interacting with the dough’s acids and producing carbon dioxide bubbles. This discovery revolutionized baking and increased even more the demand for pearlash on both sides of the Atlantic.
The American Revolution, however, coupled with diminishing European forests, prompted Europe to look for other sources of carbonates. In 1783 the French Academy of Sciences ran a contest for inventors who could develop a process for converting salt (sodium chloride) to soda ash (sodium carbonate). French chemist Nicolas LeBlanc won the prize in 1791 for reacting salt with sulfuric acid, coal, and limestone to produce soda ash. So now, not only did Europe have its own
