Chapter 1
The 3 Rules of Good Seasoning
1. Spices should be used sparingly—to enhance a food’s natural flavor rather than to dominate it. (That’s what the conservative cookbooks say.)
2. Ignore rule number one. Some food needs all the help it can get. As long as you don’t get too carried away, and remember that you can always add more but that it’s rather difficult to pull a flavor out of a dish, you have nothing to fear. (That’s what the liberal cookbooks say.)
3. Oh, the heck with rules
(that’s what I say). Let’s indulge in a little culinary anarchy here. Cooking is an art form, supremely personal. Think of the food as your canvas and the seasonings as your paints. It’s entirely up to you how to apply them. Consider how some artists use smooth delicate brushstrokes while others pile on their paints with
