    100-Calorie Desserts

    Foreword

    I was tired of having to blow my diet every time I wanted something that was sweet and had a fulfilling texture, so I went on a cooking adventure that resulted in these recipes.

    Let loose and explore different ways to prepare dessert and figure out how flavors interact with one another when chilled or baked. Most of these recipes are great conversation starters and party foods.

    Watermelon Mojito Popsicles

    These cold treats have tropical flavors and are inspired by balmy Miami nights and the Cuban signature drink, the mojito. Unlike a mojito, these pops are alcohol-free.

    This recipe is simple, much more nutritious than the popsicles found at the store and can be easily altered to meet your needs. Measurements provided will yield 6 servings.

    Ingredients:

    4 Cups Seedless Watermelon, Cubed

    7 Tbsps. Zero-Calorie Sweetener (Stevia works well).

    1 Tbsp. Chopped Mint

    2 Tbsps. Lime Juice

    2 Tbsps. Honey

    Cookware:

    Blender, Popsicle Mold

    A note on the Popsicle mold:

    If you do not have a Popsicle mold, you can get creative and use an ice tray, toothpicks and a sheet of plastic wrap to hold the toothpicks in place. If you want to use the mold but don’t have one, they can be had at your local discount store for as low as a buck.

    Directions:

    Combine all ingredients into a blender at a low to medium setting until the mixture becomes a liquid.

    Pour the mixture into Popsicle molds.

    Place them in the freezer and let them set for approximately 2 – 3 hours.
