Breakfast has just got to be the most exciting meal of the day! I am in the mood for something different just about every day. -If you are like me, you enjoy a range of different breakfast options.

Eggs are always high on my list and are a great way to start your morning. Eggs are filling and packed with protein as well as offer an endless variety in ways to prepare them, but I love me a sweeter treat doused in maple syrup and fresh fruit every now and again, as well!

The Perfect Soft- Boiled Egg

I am a huge fan of the soft-boiled egg. With a little salt and pepper, or if you dare, some sea vegetable seasoning, like dulse flakes, your quick breakkie becomes a delicious little feast.

You can make these a couple of days ahead of time too…

Bring a small pot of water to a rolling boil and place several eggs( as many as you would like, so they fit somewhat snug, you don’t want so much room so they can bounce around and crack.)

Boil for 7 minutes and prep an ice bath while the eggs boil, remove the eggs and place in the ice bath after time is up!

Optional Method:

Place eggs in small pot of cold water. Bring water to a boil and immediately remove from heat and cover. Let stand for 20 min. Remove eggs and place in cold water.

Presto! The perfect soft-boil.


This is a fabulous breakfast option that feels very decadent. –Full of veggies and cheese, you will feel like you just hit up your favorite brunch hot spot instead of rushing out the door to drop the kids off at school and go to work. Of course, this ain’t no boiled egg grab n’ go, but 5 minutes of your morning routine dedicated to a frittata is worth it.

I love using a cast iron skillet, for it can move from stovetop right into the oven. I even have a mini cast iron for when I am making my frittata for just one or two.

Prep some veggies, or be sure to set some aside from last night’s dinner! Using cooked veggies helps make this frittata a weekday breakfast option by not having to spend extra time in the morning by chopping and cooking in the AM.

Try combinations like:

Roasted red pepper, feta, zucchini

Sautéed Spinach, shitake and gruyere

Tomato, cheddar and caramelized onions

Serves 1-2 folks


About ½ c of cooked veggies for a 2-3 egg frittata

¼ cup or less of shredded of crumbled cheese

Splash of milk

2t heat safe oil, like coconut or avocado

Pinch of salt

Preheat your oven to 350 degrees

Heat up your oven safe skillet and add your oil

Add your veggies to your hot pan

Beat your eggs slightly with a fork or whisk add a splash of milk and pinch of salt and pour over your veggies, add cheese to the top and take the whole darn skillet and put in the oven for about 5 minutes or until set.

Eggs Florentine 2.0

This is a take on a classic, with extra greens like chard and nixing the hollandaise; you have yourself Eggs Florentine 2.0, a bit lighter.

Serves 1 or 2


1 clove of garlic, pressed

1 cup of fresh spinach

1 cup of chard leaves, stems discarded

¼ cup of half and half

Big pinch of salt

Pinch of allspice or a couple grates of nutmeg

Several grates of parmesan cheese

2 eggs

1 English muffin, split or 2 pieces of bread of your choice

Butter for pan and for your toasted muffin or bread

Heat up your skillet and add a pat of butter

Add your garlic and sauté for a minute, add your greens and stir until wilted, about one more minute.

Add your half and half, salt, and allspice, let reduce until you are left with a creamed spinach texture, about 4-5 minutes.

Add several grates of parmesan

Keep warm

Fry your eggs and get your toast going

Slather your English muffin or toast with butter and top with your creamed greens, your eggs and several more grates of parmesan. Enjoy!
