Coffee Grounds, Banana Peels and Diapers is a quick, inspiring read to be enjoyed over a weekend. Think of it as a longer blog based on a “Life as a Dietitian”, but in a casual, fun form with recipes included.

I still think about that combination of trash that I saw day after day in my home while caretaking young children...the endless bananas a family of five goes through, the endless pots of coffee two parents consume during childrearing years and of course those diapers. It defines your life for a while and makes you realize that your life is all about those items. Even when I entertained family and friends during the coffee grounds, banana peels and diapers phase of life, my husband and I realized that the phase comes in quick like a mad lion and then it exits quietly like a lamb. We still had a lot of great meals during those nine years along with some really good banana bread.

As my father has said, “there is your life before children and the life after children.” This book includes tales from both sides in a practical, fun and very real way with recipes included. As a RDN, it is not possible to write recipes without including the nutrient analysis for you. You are welcome, if you care about knowing what you are eating! Just know that the nutrition information is credible, but does not replace the pleasure of enjoying the meal with family and friends. Enjoying meals trumps the calorie count...truly.

Sarah Krieger, MPH, RDN is proudly a National Spokesperson for the Academy of Nutrition and Dietetics, the largest association of nutrition experts in the United States and abroad. Sarah is considered a nutrition expert in the fields of child and adolescent obesity, family nutrition, food safety, pregnancy nutrition and weight control and eating on a budget. Sarah lives in St. Petersburg, Florida with her husband and three children, six chickens and a dog. Sarah was born and proudly raised in Kalamazoo, Michigan and graduated with a Bachelor degree in Dietetics from Central Michigan University and later a Master of Public Health from the University of South Florida in Tampa, Florida.

    I adore food—slow, quality meals created with love and care that include slow-sipping wine and hours of conversation. A while back, I was watching Martha Stewart on TV while I was nursing one of my kids—I can’t remember which one—but Martha (God bless her) was performing a long segment about how to throw a hydrangea party. You know, the flowers we all grow in our gardens … She walked through her garden where others were tending to the flowers and then strolled through her large, over-the-top kitchen while overlooking her staff of 10 or so lovely people preparing the most divine food for her hydrangea garden party. I burst out laughing. Why yes, I thought. I am going to do just that: have a party all about my beautiful flowers while my staff prepares the most exquisite food; meanwhile, I'll have someone do my makeup and hair, and I will take a nap until the party starts. I love Martha Stewart, and I love her great intentions, but come on. That is not how most women, men or anyone without a staff entertains.

    I’m a registered dietitian nutritionist (RDN), and I adored food far before I studied how it works in our bodies, how it makes us thin or fat, or how it prevents and improves various diseases and conditions in our lives. But I am especially impressed with how food can improve the quality of life. We have to eat … every day … more than once, mind you. My take on food is that it should be amazing and even memorable most of the time. But we don’t need a staff of 10 or more to prepare it.

    This book was started more than a decade before publishing. It began as a brief journal where I documented what I served on certain holidays or for a family or friend get-together. These are short stories, but they are all true, so the book can be read almost like you are reading a journal. It is meant to be enjoyed leisurely and hopefully will inspire cooking and gathering in the kitchen with family, friends and even strangers! I encourage you to recreate the menus and then you will have your own story for your family too!

    For this reason, there are recipes included with some of the stories. I’m not going to apologize for not including every recipe. Do a little research on any recipe that looks interesting (to you). The way I cook is fairly simple: I see a recipe I like, modify it to the way I prefer and hope to also please those that I am dining with by doing so. Recipes can be too structured! I adore cookbooks for bedtime reading since I look for flavor combinations that will inspire me. I hope you are inspired too!

    Just know that the recipes that are included have been retested for accuracy for the nutrition facts. As an RDN that has clients with obesity, diabetes, high blood pressure and other medical situations that affect quality of life, I want you to notice that delicious and nutritious foods can be enjoyed in a party atmosphere. Most of the time when I entertain by preparing a meal for family and friends, the meals are as nutritious as possible. I embrace a huge variety of vegetables, fruits, lean meats, fish and seafood, along with whole grains. I usually don’t mention anything about the nutrition … unless someone asks. To me, nutrition and delish go hand in hand, so we don’t always have to talk about it. Instead, let’s just embark on our food journeys and enjoy nutrition.

    With that in mind, please review the nutrition facts on the recipes and notice they are similar to the nutrition facts on food labels … with a few exceptions. You will probably pick up that sugars are not included in the nutrition information. If you even care to look at that on the food label, focusing on sugar grams is honestly a waste of time. People living with diabetes know that paying more attention to the total carbohydrate gram number gives us the most information. Sugar grams on the Nutrition Facts food label include both natural and added sugars. It is difficult to separate them when calculating, and there are not any guidelines as to how many sugar grams a day are healthy—only that 10% of consumed calories (or less) can and should be from added sugars. Rest assured you are better off looking at the total carbohydrate number if you are concerned about how many grams you need each day.

    Because I care about your health and your nutrition, I also included calcium, potassium and magnesium in the nutrition facts. Who cares, you say? Foods rich in these three nutrients have been known to reduce high blood pressure (hypertension). Therefore, for those that are living with high blood pressure, knowing how much calcium, potassium and magnesium are in your diet can be helpful if you want to lower blood pressure naturally and with tasty foods. It is otherwise known as the DASH diet or the Dietary Approaches to Stop Hypertension. That’s too many words! A simpler approach is: You can enjoy delicious foods that are naturally great sources of calcium, potassium and magnesium. Cool! This is one of the reasons I love nutrition.

    Here is a quick public service announcement about these amazing little nutrients that are kind of a big deal in our bodies: The numbers for calcium, potassium and magnesium are pointed out in my recipes because most adults (and children too!) are lacking in these nutrients. Just know that the milligrams listed in each recipe are part of the daily requirement for ages 14 and up. Daily calcium needs are at least 1,000 mg, potassium is 4,700 mg, and magnesium is at least 360 mg for females and 410 mg for males. If you or someone less than age 14 is in a special time in life, such as during pregnancy or lactation, these numbers will be higher. Of course I encourage anyone with special nutrition situations to reach out to a registered dietitian. Even ask me … I know a few!
