    Easy and Amazing Gluten-Free Baking

    These are rustic and easy recipes. I hope you like them! Some are traditional recipes from Finland (the country of my origin) that I have modified and simplified; some are created by me. I also included two American favorites, Lemon Bars (first created by the Betty Crocker team, I heard) and Banana Bread.

    I prefer my pastries slightly salty and tart, not that sweet. You can tweak the amount of salt and sugar in these recipes to your taste, or even leave the salt out completely, especially if you use salted butter.

    Different flour can drastically change the taste and look of the dish. If you have a favorite brand, just use that. (If you have no problem with gluten and want to use wheat flour, it will work with these recipes too. Wheat, barley and rye mixed together makes an excellent pie crust.)
