    Introduction

    Like most people I woke up one day and noticed that I had gained twenty pounds in the last couple of years and my waistline was larger. Such a thing isn’t difficult to notice when you are used to wear a size eight and suddenly need a size twelve. I was never one to eat a lot of junk food and I never overate. I followed the health department’s dietary food guideline and was confident that I had been eating a healthy diet. So the question in my mind was: Why am I gaining weight every few months?

    I decided that I needed to go on a diet. But, have you noticed that the word die is in diet? Not very encouraging is it? And diet always symbolizes sacrifice and giving up my favorite foods. Well, I didn’t want to do that. Who does?

    So began my quest to research what was in the food I ate and how I could make it differently without sacrificing taste. I couldn’t believe it. Not only is the government’s food guideline the worst thing you can follow, but food
