After reading this cookbook, doing your own research and trying some of the recipes you will know without a doubt that the food is good, the advice is correct and it all comes from love.

What You Need To Know First
First off, (I get a lot of questions about this) by the mere definition of the word vegetarian, a pescatarian
is not a vegetarian. A pescatarian is a person who abstains from eating all animal flesh with the exception of fish. Fish is meat and hence a person who eats fish cannot truly be a vegetarian. A flexitarian is someone who loves vegetarian food, but also eats meat. As far as I can tell what is now known as a flexitarian was formally known as an omnivore. I am sure that you will agree that this person is not a vegetarian either.
So with that being said, here are the types of vegetarians:
Lacto Vegetarians- Eat dairy products as well as plant products.
Ovo Vegetarians- Eat eggs as well as plant products.
Lacto-ovo Vegetarians- Eat eggs, dairy products and plant products.
Vegan- Eats only plant products. No eggs or dairy allowed.
Raw Vegan/Raw Food Diet- A raw vegan diet consists of unprocessed vegan foods that have not been heated above 115 degrees Fahrenheit (46 degrees Celsius).
Macrobiotic Diet- The macrobiotic diet, celebrated by the selected few for its healthy and healing qualities, includes unprocessed vegan foods, such as whole grains, fruits and vegetables. The non-Vegan macrobiotic diet allows the occasional consumption of fish. Sugars and refined oils are avoided at all costs. Perhaps the most unique qualifier of the macrobiotic diet is its emphasis on the consumption of Asian vegetables, such as daikon, and sea vegetables, such as seaweed.

This Book
The vegetarian recipes in this book are a mix of mainly Vegan recipes with a few Lacto-ovo vegetarian recipes. For all of the recipes that are not Vegan I have included a note about vegan substitutes in each recipe. I will also include a little about Vegan substitutions here.
Eggs can be replaced in frying, egg salad, and baking. Mashed tofu combined with a little turmeric or with a mix (e.g. Tofu Helper or Fantastic Foods brands) is a nice alternative to scrambled eggs. Tasty tofu mixes are also available for easy eggless egg
salad.
Eggs can be replaced in baking too. For each egg, substitute
