Introduction: The inspiration behind this book and its purpose
It is becoming widely accepted that what our children eat affects their health, longevity and even how well they do at school. We all want what’s best for our children, but there is so much conflicting information around and things often seem so complicated. It doesn’t have to be that way! To illustrate I’d like to share the story that inspired me to write this book.
A few years ago I ran a ‘Health Eating’ day for a group of parents and children at the Springboard Family Project, a charity based in Oxfordshire. I called the day ‘Fun with Food’ and cooked a variety of dishes for the parents and children to taste. I took my own kids along and gave them the job of handing out stickers as rewards. The children and their parents tried a variety of foods and took home recipes for the dishes they wanted to prepare for themselves. We all had a fun afternoon and within a month the feedback received from parents was that the children were now eating a greater variety of foods and more willing to try new things. Then a few months later, when parents were asked by Springboard which activities they wanted to repeat, I was asked if I could do it again. Unfortunately, existing commitments meant I couldn’t however what happened next was, for me, a sign of true success.
Not long after, one of the mums came up to me and told me with great pride and excitement how the parents had all decided to do it for themselves and organise their own Fun with Food day. They each prepared different foods and had taken them along to share. She proudly told me what she had prepared and how much they had all enjoyed themselves. For me this was fantastic news. The parents had gained the confidence to cook and prepare healthy, fun food for themselves, their children and each other.
Years ago, when I worked as a manager, my favourite quotation was "A leader is best when people barely know he exists, when his work is done, his aim fulfilled, they will say: we did it ourselves. " Lao Tzu. So for me, having the parents do it themselves was immensely fulfilling and I wanted other parents to be able to share the experience too. This is what inspired me to write this book.
I appreciate that we are all different and some people will want to understand what health eating is and why certain foods are important, others want to know how to smuggle healthy foods into your children’s diet and some just want some easy to follow recipes. So this book is designed so that you can find those sections easily and use it in a way that suits you. There is also advice on transforming fussy eaters and suggestions for substituting foods – to make it easier when you don’t have certain ingredients in the cupboard or for those of you who have to manage allergies and food intolerances.
As a mother myself and one who worked full-time when my children were small, I understand how difficult it can be to be creative in the kitchen at the end of a long day. I also understand how expensive it can be feeding teenage boys! So most of the recipes in this book are quick, easy and economical to prepare. You will also find that as many of the recipes use additional vegetables and sometimes pulses, your recipes need less meat, reducing what is often the biggest expense.
