Michelle Kazukaitis
Michelle has degrees in Accounting, I.T and Marketing. Born in New Zealand, Michelle has lived in Europe and the Pacific Islands. Most recently, after a couple of years living in Melbourne, Michelle has settled on the Sunshine Coast of Queensland for the last ten years. A passionate foodie, Michelle embarked on a career in the culinary arts when she first left school. Although this experience was short-lived, Michelle has always continued her interest in food related pursuits. Her love of cooking has found many creative expressions. To maintain a social life when their children were babies, Michelle and her friends developed a weekly gourmet cooking event. Once a week while the babies slept, the appointed cook (rotated in even cycles!) prepared a three course gourmet meal for the others using unfamiliar recipes. Michelle and Pauline became fast friends when they met as new mothers in 2001 and they have continued to support each other through the highs and lows of life since then, including dealing with Pauline's childrens serious multiple food intolerances. It was therefore only natural, that they should team up to create ‘The Allergy Menu,” which encompasses their individual passions and complimentary skill sets. Twenty years ago, few people suffered from anaphylactic food allergies and consequently very few people understood how dangerous small traces of the wrong foods could be for food allergy sufferers. Peanut butter sandwiches were a mainstay of school lunchboxes and celebrations involving food were a no-brainer.
Now, given the epidemic prevalence of food allergies, people are far more understanding and accommodating of the needs of sufferers. Schools have Allergy Management Protocols, Restaurants have Allergy Menus and allergy food products have become a booming industry.
Never-the-less, providing allergy safe sweet treats for social occasions, remains one of the biggest catering challenges for everyone. Especially since it is likely that there will be more than one guest with an allergy and most cakes and desserts include four of the top allergens (eggs, milk, gluten and nuts).
While our website The Allergy Menu.com caters to a far more extensive list of food allergens and food intolerances, we’ve created this e-book especially for those of you who would like to include food allergy sufferers in your special celebrations and for those who have allergies but want some recipes for the occasions where time is of the essence and treats are required.
These recipes will enable you to create delicious, fuss free sweets without eggs, dairy, gluten and nuts. You won’t need to buy a whole lot of expensive allergy products or attend a special cooking class and most ingredients will be available at your local supermarket (possibly in the specialty aisles). The trickiest ingredient we’ve included is xanthan gum, an inexpensive powder, which helps gluten free products to rise and hold their form. Because it is only used in very small amounts, it does not take up a lot of space and keeps for long periods of time.
Preparing safe food does require you to know your ingredients and to follow a few simple protocols and procedures, so be sure to read the following pages before you shop and
