Introduction
Making homemade preserves is easier than you think, many fine and popular jams, chutneys and relish can be made from locally grown fruits and vegetables and with there being major differences in the pricing between your homemade preserve and commercial brands it can reduce your shopping bill. Not only that, home made jams and chutneys can be an excellent gift to a dinner party or a relish can be used on your barbecue burgers and sausages before the winter months draw in.
Many of the great tasting homemade preserves use natural ingredients you can find from rambling around the countryside. Blackberries, apples and many other fruits that can be found in the great outdoors.

Apricot Jam
Ingredients
3 lbs of dried apricots
9 pints of water
9 lbs of sugar
2 oz. almonds
Method
1. Cut the apricots into pieces and let them stand in the water for 24 hours.
2. Blanch the almonds and make sure any skin has been removed.
3. With the apricots still standing in the water, bring to the boil and cook until the fruit is tender. This will be about half an hour.
