How to make the most of April’s best ingredients

Purple sprouting broccoli in oyster sauce

Purple sprouting broccoli is matched with a moreish sweet and salty oyster sauce.

15 MINUTES | SERVES 4 | EASY | LC

purple sprouting broccoli 400g, halved lengthways
vegetable oil 2 tbsp
garlic 2 cloves, crushed
red chilli 1, deseeded and finely chopped
oyster sauce 2 tbsp
light soy sauce 11/2 tbsp
caster sugar ½ tsp
cooked rice to serve

1 Cook the sprouting broccoli in a pan of lightly salted boiling water for 2 minutes, then drain well.

Heat the oil in a large frying pan or wok, add the garlic and most of the chilli, and cook for 1 minute. Add the broccoli and cook for another 2-3 minutes, before adding the oyster sauce, soy sauce and sugar with 50ml of water. Toss and cook until the sauce reduces and starts to coat the broccoli. Tip onto a serving dish and sprinkle with a little more chilli, if you like. Serve with
