TUSCAN BEANS

PER SERVING 524 cals, 24g fat, 5g sat fat, 48g carbs

This hearty dish works so well with the addition of sweet chestnuts and sage. It’s a glorious combination that always hits the spot.

SERVES 2

2tbsp extra-virgin olive oil
120g (4oz) onion (about 1 small), finely chopped
120g (4oz) carrot (about 1 large), finely chopped
3 garlic cloves, grated
200g (7oz) peeled and deseeded butternut squash, cut into 1cm (½in) cubes
1 bay leaf
6 fresh sage leaves
60g (2oz) cooked and peeled chestnuts, crumbled
1 vegetable stock cube
Sea salt and freshly ground black pepper
400g tin butter beans, drained and rinsed
160g (5½oz) savoy cabbage (about 1 head), leaves separated and torn

To serve:

2tbsp grated Parmesan cheese
