3 x 300g chicken breast fillets, trimmed
1 tblsp olive oil
2 cloves garlic, crushed
1 tblsp chopped fresh rosemary
2 tsps finely grated lemon rind
150g tub fresh basil pesto
Baby spinach leaves, to serve
