Lentil And Vegetable Soup
ENOUGH for 3 large pots or about 14 litres
500g brown lentils or other legumes such as beans (or red lentils)
1kg soup mix (rinsed)
1 cup sunflower or canola oil
5 large onions, roughly chopped
2kg carrots (butternut or pumpkin), roughly chopped
1 large cabbage (or any green vegetable)
8 stock cubes (any)
4 tsp coriander powder
4 tsp cumin powder (or coriander powder or 8 tsp mild curry powder)
3 tbs dried mixed herbs seasoning to taste
Fry the onions in the oil. When soft, add the chopped vegetables and leave to sweat for a few minutes.
