ROOT VEG BURGERS

Easy to make and packed with flavour, these burgers are ideal for a relaxed family dinner.

SERVES 4

Knob of butter
1 onion, finely chopped
350g (12oz) floury potatoes, such as Maris Piper, peeled and diced
1 garlic clove, crushed
250g (9oz) celeriac, trimmed and peeled
250g (9oz) carrots, trimmed and peeled
3tbsp roughly chopped coriander
150g (5oz) feta cheese, crumbled
1 large egg
