BUTTERNUT SQUASH & CORIANDER SOUP

The perfect warming meat-free meal to enjoy after a lovely winter walk.

PER SERVING 170 cals, 9g fat, 5g sat fat, 17g carbs

SERVES 6

1 butternut squash (approx. 1kg/2¼lb), peeled and cut into bite-size pieces, reserving the seeds
2tbsp olive oil
1tbsp maple syrup (or honey if not vegan)
1tsp ground cumin
½tsp ground cinnamon
1 onion, roughly chopped
2 garlic cloves, finely chopped
1tsp coriander seeds
½tsp cayenne pepper
500ml (16fl oz) vegetable stock
400ml can of reduced-fat coconut milk
Large handful of roughly chopped fresh
