BUTTERNUT SQUASH & CORIANDER SOUP
The perfect warming meat-free meal to enjoy after a lovely winter walk.
PER SERVING 170 cals, 9g fat, 5g sat fat, 17g carbs
SERVES 6
✣ 1 butternut squash (approx. 1kg/2¼lb), peeled and cut into bite-size pieces, reserving the seeds
✣ 2tbsp olive oil
✣ 1tbsp maple syrup (or honey if not vegan)
✣ 1tsp ground cumin
✣ ½tsp ground cinnamon
✣ 1 onion, roughly chopped
✣ 2 garlic cloves, finely chopped
✣ 1tsp coriander seeds
✣ ½tsp cayenne pepper
✣ 500ml (16fl oz) vegetable stock
✣ 400ml can of reduced-fat coconut milk
✣ Large handful of roughly chopped fresh
