This stunning side is a great way to use up your stash of potatoes, and you can mix and match the types of potatoes to use what you have on hand.

4 tablespoons unsalted butter
4 cloves garlic, grated
¼ cup all-purpose flour
2 cups whole milk, room temperature
¼ cup white wine
2½ teaspoons kosher salt, divided
1 teaspoon ground black pepper, divided
2 medium red potatoes, scrubbed and sliced ⅛ inch thick
