Steak in the ground

When is a sausage roll not a sausage roll? When it’s filled with lentils and called a “snausage” roll. This meatless treat is one of three vegetarian recipes from Supergood, my new book, featured in this column.

In the first one, adding spinach is a twist on regular pesto, making it more cost-effective and packing in extra green goodness. It also features walnuts for flavour and cashews for creaminess. And don’t forget nooch (nutritional yeast) – all cheesy and amazing.

PESTO & SPINACH PASTA

⅓ cup raw cashews
⅓ cup raw walnuts
3 tbsp nutritional yeast
