FEW INGREDIENTS ARE as adaptable and versatile as potatoes. You can boil, bake, mash, fry, or grill them—just about any method you can think of, you can use it on potatoes. But I’m extra-excited about a process I’ve been tinkering with a lot in my home kitchen: tearing and frying them.
