MONDAY

Chicken koftas with pilaf

PREP + COOK TIME 45 MINS + CHILLING SERVES 4

500g chicken mince
3 tbsp korma paste
24 flat-sided bamboo skewers (see tip)
1 cup basmati rice
2 tbsp canola oil
1 cinnamon stick
2 cardamom pods, bruised
2 whole cloves
½ tsp cumin seeds
1 onion, thinly sliced
2 cups water
½ cup frozen peas, thawed
1 cup grapes, halved (see tip)
4 sprigs fresh mint, leaves picked
4 sprigs fresh coriander, leaves picked
2/3 cup low-fat Greek yoghurt

Place mince and paste in a small bowl; mix well. Divide mince mixture into 24 portions. Shape each portion onto a bamboo skewer. Refrigerate.
