A dark-coloured gammon that’s flavourful and very moist. The smokey flavour comes through beautifully and the overall taste is balanced. This gammon is cured, so we boiled it: baking would have made it too salty. The netting removes easily; the meat holds together well during slicing.

This joint has a lovely rustic appearance. It holds its shape well after cooking, though we struggled to remove the netting once the meat had cooked. Tasters felt it had a synthetic flavour, too much salt and brine, and that the texture was slightly dry. The gammon carves beautifully.
