WHEN IT COMES TO FOOD CHOICES, we love to say “cheese.” From pizzas to grilled-cheese sandwiches to cheeseburgers, Americans annually consume roughly 40 pounds of cheese per capita.

Our earliest ancestors would approve: The oldest evidence of cheesemaking dates back 7,500 years. The earliest surviving depiction of cheese is a frieze at the Temple of Ninhursag in Mesopotamia dating from 3,000 and the Bible. And yet the invention of cheese is a mystery.
