Chorizo cauliflower fried rice

15 MINUTES | SERVES 4 | EASY

Sometimes we want a healthier version of our favourite dish – cauliflower ‘rice’ works perfectly here because it soaks up the flavours from the chorizo, ginger, garlic and soy.

olive oil for frying
chorizo 225g, peeled and cut into long diagonal slices
garlic 2 cloves
ginger a thumb-sized piece
baby corn and mangetout 1 small pack
cauliflower 1 medium, roughly chopped
frozen podded edamame beans 250g
eggs 4 medium
soy sauce 3 tbsp
coriander a handful
chilli sauce a drizzle
