    In this judging you have to decide whether you want simple uncomplicated quaffers or something a bit more interesting. Nothing wrong with either choice but to get complexity winemakers need to ferment the wine in the bottle and leave it on lees (sediment) so not surprisingly you will pay more for that. Then for another step up Champagne offers more delights - at a price!

    Overall, these wines are pleasant quaffers that are crisp, clean and easy to drink.

    De Bortoli King Valley Prosecco NV

    Soft and easy drinking with lifted lychee-like aromas and peach fizz flavours. $17.99

    Yarra Burn South Eastern Australia Prosecco NV

    Fragrant citrus bouquet and great weight of green apple flavours. $20

    A more “serious” and complex style with restrained floral fruit characters. $28
