SMASHED TOMATO-AND-RED PEPPER SMOOR WITH SQUEAKY HALLOUMI
Serves 4 EASY GREAT VALUE Preparation: 10 minutes Cooking: 40 minutes
Woolworths baby Rosa tomatoes 200 g
red peppers 2, halved and seeded
garlic 4 cloves, halved
anchovy fillets 6 (optional)
olive oil 3 T
sea salt and freshly ground black pepper, to taste
halloumi 320 g, halved lengthways
Preheat the oven to 180°C. Place the tomatoes inside the red peppers on a baking tray, then tuck the garlic and anchovies inside the peppers and drizzle with olive oil. Roast for 30 minutes.
