KEY LIME PIE WITH SPECULOOS CRUST

Serves 10-12 Preparation time 30-35 minutes, plus cooling and chilling Cooking time 45-55 minutes

INGREDIENTS

For the base

• 375g/13oz speculoos or Lotus biscuits, finely crushed
• 85g/3¼oz unsalted butter, melted
• 1 large egg white
• ¼ tsp fine sea salt

For the filling

• 6 large egg yolks• Finely grated zest of 2 limes• 300ml/½pt lime juice (from 8-10 large limes)• 2 x 397g tins condensed
