Eggs Benedict Baguette

SERVES 6 | PREP AND COOK: 30 MINUTES

INGREDIENTS

6 eggs
1 large or 2 small baguettes
Softened butter for spreading
200g thick-cut smoked ham, roughly torn
Cayenne pepper
Handful of rocket leaves

HOLLANDAISE

5 egg yolks
1 tbsp, plus 1 tsp white wine vinegar
200g unsalted butter, cold, cubed
1 tbsp lemon juice

METHOD
