Miso Amazake Cheesecake

Makes: 18cm round cake

50g butter, softened
100g Spiral Organic Brown Rice Amazake
100g cream cheese, softened
2 egg yolks
40g Spiral Organic
Shiro Miso
30g yoghurt
2 tbsp lemon juice
1 tbsp lemon zest
30g plain flour, sifted

Egg Whites

2 egg whites
30g granulated sugar

Preheat oven to 170°C. Line the bottom and sides of a baking pan with baking paper.

In a mixing bowl, place all ingredients except lemon juice, zest and flour. Mix well until smooth.
