Puff pastry sheets are a handy item to have in the freezer. Load them up with whatever you’ve got and you’ve made a tart!

roasted cauliflower & cheese risotto

serves 4 I prep 15 mins I cooking 35 mins

4 cups small cauliflower or broccoli florets
2 tbs extra virgin olive oil
750ml (3 cups) chicken stock
150g deli meat (such as pancetta, rindless bacon or ham), chopped
1 leek, trimmed, sliced
2 celery sticks, chopped
2 garlic cloves, finely chopped
275g (1 1/4 cups) arborio rice
125ml (1/2 cup) white wine
100g cheese (such as Jarlsberg, blue or cheddar), coarsely grated/crumbled
80g (1/2 cup) frozen peas, thawed 1/4 cup chopped fresh herbs (such as parsley, chives or basil)
20g (1/4 cup) parmesan, finely grated

1 Preheat oven to 200°C/180°C fan forced. Line a baking tray with baking paper. Place cauliflower or broccoli on prepared tray. Drizzle over 1 tbs olive oil then season. Toss to coat. Bake for 25 minutes or until golden.
