BREAKING BREAD

FRENCH TOAST, CARAMELISED PEARS AND RICOTTA

SERVES 6

3 eggs
150ml milk
1/2 tsp ground cinnamon
Pinch freshly grated nutmeg
Finely grated zest of1/2 lemon
6 thick-cut slices day-old white bread
60g unsalted butter, chopped
2 tbs extra virgin olive oil
200g fresh ricotta, drained

CARAMELISED PEARS

60g unsalted butter
2 pears, cut into quarters lengthwise
2 tbs honey, plus extra to drizzle
1 tsp vanilla extract
