CARAMELISED ONION AND BLUE CHEESE QUICHE
In this recipe Reuben transforms traditional family flavours into a more modern dish. The recipe works equally well for large and mini quiches.
MAKES 1 LARGE QUICHE PREPARATION: 20 MIN COOKING: 30 MIN BAKING: 20 MIN
TOMATO CHUTNEY
30ml (2T) oil
2,5ml (½t) black onion seeds
1 bay leaf
2 dried chillies, broken into pieces
500g Roma tomatoes, skins and seeds removed, and diced
7,5ml (1½t) chilli powder
180g sugar
45ml (3T) raisins 30ml (2T) apple cider vinegar
QUICHE
4 onions, thinly sliced
250ml (1c) canola oil
500g frozen puff or shortcrust pastry
185g blue cheese
60g mascarpone or cream cheese
1 egg yolk
100g spinach, shredded
