Spatchcock chicken
Serves 6 Preparation time 30 minutes Cooking time 35 – 40 minutes
You need
• 1 large chicken (1,6 kg)
• 100 g butter
• 5 big cloves of garlic, sliced
• 2 red chillies, chopped
• 1 sprig of rosemary, needles stripped and chopped
• juice and grated peel of 1 lemon
• 1 tablespoon smoked paprika
• 1 teaspoon coarse sea salt
• ½ teaspoon freshly ground black pepper
• 2 tablespoons olive oil
