Can you share a favourite food memor y?

Ganesh: The first time I had pig’s part soup, as a 13-year-old, in Singapore. How come so many parts of the pig taste so good? Also braised tofu and century egg on rice. Along with pickled vegetables. And gravy! Gravy!

What part of New Zealand do you love most, and why?

Ganesh: I love living in Auckland, but Golden Bay is another world. It takes care of me very well. Slows me right down.

Where’s next on your New Zealand travel list?

Ganesh: I’m going to Napier soon. I can’t wait!

What’s a cool new ingredient discover y you’ve made recently?

Ganesh: Aquafaba – the water in which pulses like chickpeas are kept. It’s used as an egg white substitute and makes the most delicious, silky vegan mayonnaise.

What music do you listen to when you’re cooking?

Ganesh: Ibiza house.

What five things do you always have in your fridge?

Ganesh: Habanero hot sauce; a jar of ready-to-use garlic; eggs; oranges; and bottles of cold water.
