SLOW COOKED to perfection

RICH BEEF AND POTATO CASSEROLE

SERVES 6 PREP AND COOK: 8 HOURS, 30 MINS

2kg beef chuck steak, trimmed, cut into 4cm pieces
⅓ cup plain flour
¼ cup olive oil
8 pickling onions, peeled
4 cloves garlic, crushed
375ml bottle pale ale
700g chat potatoes
400g cup mushrooms, trimmed
2 tblsps Worcestershire sauce
2 sprigs fresh rosemary
2 x 6g beef stock cubes, crumbled
Steamed green beans and crusty bread, to serve

1 Toss beef in flour seasoned with salt and pepper. Shake off excess, reserving the remaining flour.

2 Heat 1 tblsp of the oil in a large, nonstick frying pan. Add beef in three batches, adding 1 tblsp of the remaining oil with each batch. Cook, turning occasionally, until browned all over. Transfer to a removable bowl of a 5- to 6-litre capacity slow cooker.
