Perfect puddings

MARMALADE DELICIOUS

PREP + COOK TIME 1 HOUR 10 MINUTES SERVES 6

3 eggs, separated
½ cup (110g) caster sugar
75g butter, melted
¾ cup (180ml) milk
2 teaspoons grated lemon rind
⅓ cup (80ml) lemon juice
¼ cup (80g) lime marmalade
⅓ cup (50g) self-raising flour
¼ cup (55g) caster sugar, extra icing sugar, to serve

1 Preheat oven 180°C/160°C fan. Grease a 1.5-litre (6-cup) ovenproof dish.

2 Beat egg yolks and caster sugar in a small bowl with an electric mixer until thick and creamy; transfer to a large bowl. Stir in butter, milk, lemon rind and juice, marmalade and sifted flour.
