What you’ll need:

800 g square pork belly, skin removed
20 g non-iodised coarse sea salt
2 g pink curing salt
12 g brown sugar
1½ tsp ground black pepper
OPTIONAL FLAVOURS
2 tsp smoked paprika
1 garlic clove, crushed
2 sprigs fresh thyme
1 tsp coriander seeds
