BREAKING BREAD

BRINJAL AND OLIVE DIP

Serves: 4-6

Preparation time: 15 minutes

Cooking time: 20 minutes

Oven temperature: 180°C

♥ 2 large brinjals, halved lengthways
♥ olive oil
♥ 2 cloves garlic, crushed
♥ 15ml lemon juice
♥ 5ml grated lemon zest
♥ 2ml dried mint
♥ 45ml chopped parsley
♥ half a red onion, finely chopped
♥ handful of kalamata olives, pitted and quartered
♥ 125ml feta cheese

1 Place the brinjals onto a baking tray, cut side upwards. Drizzle with olive oil. Roast in a preheated oven for 20 minutes or until soft.

2 Remove from the oven and set aside to cool. Scoop the flesh out of the brinjal skin, chop it up and then transfer it to a bowl.

3 Add the remaining ingredients. Stir well, then season to taste with salt and freshly ground black pepper. Refrigerate until ready to serve. Serve with flatbreads as a snack or as a side dish.

CRISPY LAVASH CRACKERS

Lavash is a Middle Eastern flatbread. There are many different types and they can be served as a soft bread or baked until crisp like these ones. They are fantastic served with a dip or soup, or you can serve them as a starter or light meal with cheeses, avocado, cold meats or seafood.

Preparation time: 1 hour, plus rising time

Baking time: 5-8 minutes per batch

Oven temperature: 180°C

♥ 440g (810ml) white bread flour
♥ 10g instant yeast
♥ 80ml mixed seeds (sesame, pumpkin, linseed, poppy)
♥ 40ml olive oil
♥ 250ml lukewarm water
