Makes 6 skewers Preparation time 15-20 minutes, plus cooling and marinating Cooking time 45-50 minutes

INGREDIENTS

• 330ml can Goslings Ginger Beer• 150g/5oz brown sugar• 3 tbsp Goslings Black Seal Rum• 1 tsp celery salt• 1 tsp garlic salt• 1 tsp onion powder• 2 tbsp Worcestershire sauce• Salt• 100g/4oz• 3 limes (1 for the marinade, 2 cut into large chunks for the skewers)• 400g/14oz pork loin, cubed• 1 pineapple, peeled and the flesh cut into cubes
