SALAD DRESSINGS

Most salad dressings are essentially a mix of oil and acid, with other ingredients (such as herbs and mustard) added for extra flavour. As a rule of thumb, they balance 1 part vinegar to 3 parts oil—but the quantities and type of either can be varied to suit your own taste. You do you! But hey, you can never go wrong with a classic:

FRENCH VINAIGRETTE

• 1/3 cup white wine vinegar• 1 cup olive oil• 3 tbsp• salt and pepper
