SKILLET CHICKEN WITH PICKLED TOMATOES

Makes 4 servings

2 tablespoons olive oil
½ teaspoon kosher salt
¼ teaspoon ground black pepper
4 boneless skinless chicken breasts
½ cup chopped smoked sausage
1 cup drained Quick-Pickled Cherry Tomatoes (recipe follows)
2 tablespoons chopped fresh parsley

1. Preheat oven to 400°.

2. In a 10-inch cast-iron skillet, heat oil over medium-high heat.
