SKILLET CHICKEN WITH PICKLED TOMATOES
Makes 4 servings
2 tablespoons olive oil
½ teaspoon kosher salt
¼ teaspoon ground black pepper
4 boneless skinless chicken breasts
½ cup chopped smoked sausage
1 cup drained Quick-Pickled Cherry Tomatoes (recipe follows)
2 tablespoons chopped fresh parsley
1. Preheat oven to 400°.
2. In a 10-inch cast-iron skillet, heat oil over medium-high heat.
Sprinkle salt and pepper all over chicken. Cook chicken until lightly browned, about 2 minutes per side. Remove from skillet. Add sausage to skillet; cook, stirring occasionally, until lightly browned,
