HEALTHIER FAMILY BOLOGNESE
Preparation time 10 mins
Cooking time 1 hour
Serves 4 (with extra sauce)
2 Tbsp extra virgin olive oil 2 brown onions, very finely diced
2 sticks celery, very finely diced
6 cloves garlic, minced
2 dried bay leaves, crumbled
500g beef mince
2 Tbsp tomato paste
1 tsp dried oregano
½ cup olive brine (saved from a jar of olives) Rind of parmesan wedges
1L beef stock
¼ cup red split lentils, rinsed
400g rigatoni pasta
Chopped olives, grated parmesan cheese and basil leaves, to serve
STEP 1 Heat oil in a large, heavy-based pan and sauté onion, celery, garlic and crumbled bay leaves for 5 minutes, until softened. Add mince and cook for a further 5 minutes, until browned.
STEP 2 Mix in tomato paste, dried oregano, brine, rind of parmesan, stock
