KIDS on dinner duty

SAN CHOY BOW

PREP + COOK TIME 40 MINUTES SERVES 4

1 small onion (80g)
2 cloves garlic
2cm piece fresh ginger (10g)
125g fresh shiitake mushrooms
4 green onions
2 teaspoons sesame oil
500g minced pork
2 tablespoons water
2 tablespoons light soy sauce
2 tablespoons oyster sauce
1 tablespoon lime juice
2 cups (160g) bean sprouts
¼ cup roughly chopped fresh coriander
12 large iceberg lettuce leaves

1 Peel onion, garlic and ginger. Finely chop onion and mushrooms. Crush garlic and finely grate ginger. Thinly slice green onions.
