CHICKEN SATAY SKEWERS ON NAAN WITH CUCUMBER SALAD

SERVES 4 PREP AND COOK: 35 MINS

8 satay-style chicken kebabs

2 x 250g packets original naan

CUCUMBER SALAD

2 Lebanese cucumbers, finely chopped

½ small red onion, halved, thinly sliced

60g bag rocket leaves, chopped

1 Heat a lightly oiled, large, non-stick frying pan over a medium to high heat. Add skewers in two batches. Cook, turning regularly, for about 6 to 8 minutes, or until cooked through. Remove. Cover to keep warm.

2 Heat same, clean frying pan over a medium heat. Add naan in two batches. Cook for about 1 to 2 minutes on each side, or until hot. Remove.
